Glucovis 50

Glucovis 50 is a complex of Mannan and Xanthan Gum. The two components interact in solution at 80C and form synergistic gels on cooling.

When cooled with constant stirring, fluid gels are formed (as in the top image on the left). When cool alone with no agitation, solid gels are formed (as in the bottom image on the left). The solid gels can literally be cut with a knife.

Glucovis can be used for aqueous gels but also in emulsions to impact a smooth texture and improve stability.
